Luscious Lemon Dessert

 

Cool, light and creamy, this dessert screams summertime party.  Great to serve at a bridal or baby shower too.  Everyone loves the cheesecake layer with the lemony topping that goes down sooooooo easy.  If you like cheesecake and lemon, I promise this dessert will become one of your favorites!

 

2 cups all-purpose flour

1 cup butter, softened

½ cup crushed nuts

2-8 oz. packages cream cheese

1 cup sugar

2-3.4 oz. packages instant lemon pudding mix

3 ½ cups cold milk

1 container Cool Whip

Juice and zest from one lemon

 

Preheat oven to 350.  In a medium bowl, combine flour and butter using a pastry cutter until a ball forms.  Add nuts.  Press into the bottom of a 9 x 13 inch baking dish.

Bake for 25 minutes, or until lightly golden.  Remove from oven and allow to cool completely.

In a medium bowl, beat the cream cheese and sugar together, then add lemon juice and zest.  Beat until smooth and well blended.  Spread evenly over cooled crust.  In another bowl, whisk together the lemon pudding mix and milk for 3 to 5 minutes.  Spread over the cream cheese layer.  Chill until set, the top with whipped topping.  Enjoy!
