Mom’s Salad

 

This is my son Steven’s favorite.  Every Thanksgiving always includes Mom’s Salad.  Its orange color makes it the perfect side for the holiday.  You can also make it for Christmas by switching green jello for orange and switching applesauce or pears for the apricots.  Kids of all ages love this creamy salad and I’m sure it will become one of your family’s favorites too!

 

½ cup sugar                                     2 small jars apricot baby food

1-8oz can crushed pineapple       1-8oz pkg. cream cheese

2-3oz pkg. orange jello                  1-8oz container Cool Whip

 

Combine pineapple and jello in saucepan.  Over medium high heat stir until jello is dissolved.  Remove from heat.  Add sugar, baby food and cream cheese.  Beat until smooth.  Allow to cool slightly; then process in blender until lump free.  When jello is cool and begins to thicken, fold in Cool Whip.  Spoon into 8 x 8 inch dish or mold.  Chill until completely set.  Enjoy!
