Aunt Mary’s Lemon Cheesecake

 

This is a Kerchmar family favorite, always made by Aunt Mary on holidays and when requested by family members.  Light and fluffy, it is not your typical cheesecake.  It does not require many ingredients and is easy to make.  Perfect for when you need a cool and creamy dessert that won’t send you over the top at the end of a big meal.

 

1 ½ cups graham cracker crumbs

1 T. sugar

¼ cup butter, melted

Mix above together, save a little to sprinkle on the top.  Press the rest into a 9 x 13 glass dish.  Stir together 1 large package of lemon Jello and 1 cup boiling water; allow to cool, then mix in 1-8 oz. package of softened cream cheese.

Beat 1 large can of Carnation or Pet Milk until fluffy, then add 1 cup sugar and 1 t. vanilla; beat until thick.  Add Jello and cream cheese mixture and whip together.  Pour into crust, sprinkle reserved graham cracker crumbs on top and chill several hours.  Enjoy!
