Tortellini Chicken Soup

 

 What an easy soup to make!  Using a supermarket rotisserie chicken and packaged tortellini (dry or frozen) is so fast it will be one of your go-to meals.  There is something so comforting and warming about a hot bowl of chicken soup.  The tortellini is a great twist—this is not your average chicken noodle soup. Sprinkle parmesan cheese on top if desired.

 

1 package (9 oz.) three cheese tortellini

6 cups chicken broth

1 package Lipton’s chicken noodle soup dry mix

1 bag (8 oz.) shredded carrots

1 rotisserie chicken, shredded

 

Cook tortellini following package directions.  Drain and reserve.  Bring broth to a boil in a large dutch oven or kettle.  Add carrots and Lipton soup mix and simmer for 10 minutes until carrots are tender.  Add chicken and cooked tortellini.  Heat through.  Ladle into bowls.  Enjoy!
