Pineapple Squares

 

These dessert squares are super moist, and I guarantee they will be the easiest and tastiest fruit squares you will ever make.  Mix everything together in one big bowl and viola, you are done.  The frosting can be used for all sorts of cakes, bars, cupcakes, cookies—whatever needs a touch of cream cheese sweetness.  Perfect for a cookout or a large group, this recipe makes a cookie sheet sized cake.

 

2 cups flour                                                              2 t. baking soda

2 cups sugar                                                             2 eggs

1-20oz. can crushed pineapple (juice too!)

1 t. vanilla

 

Put all of the above ingredients in a large bowl and beat well using a mixer.  Grease and flour a deep-sided cookie sheet.  Spread in floured pan.  Bake at 350 for 30 minutes or until light brown and toothpick inserted in middle comes out clean.  Cool before frosting.

 

Frosting:  1 stick butter or margarine, softened          1 t. vanilla

1-8oz. cream cheese, softened         1 ½ cups powdered sugar

 

Beat all until smooth and creamy with mixer; spread on cooled bars.  Top with chopped nuts if desired.  Enjoy!
