Oven Baked BBQ Pork Chops

 

BBQ and pork just seem to go together—like peanut butter and jelly.  This sweet yet savory dish comes together fast for a quick weeknight meal.  Purchase bone-in chops for this dish as it will help with having moist and juicy deliciousness. If you don’t have the orange juice you can leave it out but it does add a citrusy sweetness.  Add more BBQ sauce if you want to have extra to spoon over potatoes or rice.


4 bone-in center cut pork chops

1 medium onion

2 cloves garlic, chopped finely

½ cup orange juice

½ cup BBQ sauce, your choice

Salt and pepper

Olive oil

 

Preheat oven to 400 F.  Sprinkle chops with salt and pepper to taste.  Heat 2 T. oil in large skillet over medium high heat.  Add the chops and cook until slightly brown (not cooked all the way through—remember these are going to bake in the oven).  Transfer to platter.  Add 1 T. oil to the skillet.  Add onion and sauté until softened, approx. 4 minutes.  Stir in garlic and continue to stir (do not let garlic get too brown as this causes bitterness).  Add orange juice and cook until most of the liquid has evaporated.  Add BBQ sauce, stir, then return chops to pan and coat with sauce mixture.  Transfer to an oven-proof baking dish and bake until chops are tender and barely pink in the center, about 1 hour.   Spoon sauce over chops before serving.  Enjoy!
