Jammy Jam Bars

 

These bars are double fruity with a wonderful buttery shortbread crust.  If you don´t have peach or strawberry, use whatever flavors your family likes best.  But beware–they will definitely disappear fast.  I have never been able to keep them on hand for more than two days!

 

2 cups flour

½ cup sugar

1 cup butter

1 cup peach preserves

8 teaspoons strawberry preserves

Powdered sugar

 

Combine first three ingredients in a medium bowl.  Cut in butter with a pastry blender until crumbly.  Reserve 1 cup flour mixture for topping.  Lightly grease an 11 x 7 baking dish.  Press remaining flour mixture onto bottom of prepared dish.  Bake at 350 for 25-30 minutes until lightly browned.  Remove from oven and spread peach preserves over crust in pan.

 

 

Dollop raspberry preserves by teaspoonfuls over peach preserves.  Sprinkle reserved flour mixture over preserves.  Bake for 35-40 minutes or until golden brown.  Let cool on wire rack, then cut into bars.  Sprinkle with powdered sugar if desired.  Enjoy!
