German Potato Salad

 

This is a German tradition, but you don’t need to be German to enjoy this dish!  Full of potato, onion, and bacon goodness, this hot salad is sweet and sour at the same time.  You will need to fry the bacon in a regular pan as the bacon grease is a key ingredient here.  It makes a wonderful side for most meats, and leftovers are great reheated the next day.

 

5 lbs. red potatoes

1 lb. bacon, cut into 1 inch pieces

1 large sweet onion, chopped

½ cup sugar

½ cup vinegar

 

Boil potatoes until done; peel and cut into thin slices.  Alternate potatoes and onion in large bowl.  Fry bacon until crisp.  Remove bacon leaving fat in pan.  Mix sugar into fat until dissolved making syrup.  Add vinegar; stir together.  Pour over potatoes and onion in bowl. Gently toss to coat.  Enjoy!
