Fruity Broccoli Salad

 

I really love this crunchy salad.  It is chock full of things that are healthy—what could be better for you than broccoli and fruit.  To add extra crunch I sometimes add ½ cup of cashews or pecans if I have them.  Since you make your own dressing with ingredients you probably already have in your cupboards, it is a cinch to throw together.  Refrigerate overnight for the best flavor.

 

½ cup grated cheddar cheese                    ½ cup cooked bacon, chopped

1 large bunch broccoli, bite-size pieces     1 apple, chopped

1 cup raisins                                                   1 cup mayonnaise

2 T. vinegar                                                    2 T. sugar

 

Combine cheese, raisins, apple and broccoli in bowl.  Mix mayo, vinegar and sugar in a small bowl, then toss with other ingredients.  Add bacon; then toss gently.  Refrigerate for at least 2 hours, overnight if possible.  Enjoy!
