Chicken Stuffing Delight

 

Just like chicken paprikash, only with stuffing!  No fancy ingredients here—a pretty basic chicken dish, but with a garlicky, creamy sauce that can be spooned over mashed potatoes for a complete meal.  If you have some chicken and a box of stuffing mix in your pantry, you are good to go.

 

1 pkg. Stove Top Stuffing for chicken (I use the cornbread variety)

6 boneless, skinless chicken breasts

1 can cream of chicken soup

1-8 oz. carton sour cream

2 garlic cloves, minced

1 medium onion, finely chopped

3 T. olive oil

½ t. salt

½ t. pepper

1 t. garlic powder

1 1/2 T. paprika

 

Mix contents of stuffing pouch with 1 2/3 cups water; heat according to package; set aside.  Sauté onion and garlic in olive oil.  Add chicken breasts and brown on each side.  Remove from heat and place all in 9 x 13 greased baking dish.  Mix soup, sour cream, and spices; pour over chicken.  Spoon stuffing evenly over top.  Cover with foil.  Bake at 350 for 50 minutes, then uncover and bake an additional 10 minutes until top is brown and chicken is cooked through.  Enjoy!
