Quinoa Cranberry Rice
Quinoa is a fairly new “super grain” whose demand in recipes has risen very sharply recently, and it’s good for you too. It is high in protein and contains all nine essential amino acids. It is a great wheat-free alternative and is perfect for a vegan diet. I discovered these pouches of “Seeds of Change Quinoa and Brown Rice with Garlic” at Sam’s Club, but they also have them at your local grocery store. They are full of flavor, quick and easy to prepare in the microwave right in the pouch. I decided to jazz up the quinoa and add in two of my favorites: cranberry and onion. Wow, is it yummy! It makes a great addition to any meal. Wait until you see how easy this dish comes together.
1 pouch Seeds of Change Quinoa and Brown Rice
½ onion, chopped
½ pouch of dried cranberries
Place chopped onion and cranberries in microwave-proof dish. Prepare quinoa as directed on pouch. Open heated quinoa and pour over onion and cranberries in dish. Do not stir—this will heat the onion and cranberry as it sits. Allow to rest in dish for 10 minutes, then stir to combine. Place back in microwave and heat on high for additional 2 minutes. Stir, serve and enjoy!
