Colorful Rice

 

If you are wondering what you can do with leftover rice from the Chinese restaurant, this is an excellent recipe.  I use whatever leftovers I have or whatever find in my cupboard.  My favorites are dried cranberries, onions and peas, but you can certainly mix it up however you and your family want.

 

Leftover white or brown rice

veggies of your choice

4 T. butter

 

In a large pan melt butter.  Add rice and onion; saute until warm and mixed with butter. Add veggies and cook until everything is heated through.  Enjoy!
