Honey Roasted Carrots
These carrots are a sweet caramelized treat. Parboiling them first makes them fork tender when they come out of the oven. They are a perfect accompaniment to any meal. My son Steven loves them—he could never eat enough. Be sure to make extra because they are that good! The only thing you have to be careful of is not burning the carrots. With only four ingredients, it is super easy to prepare.
2 lbs. thin carrots, trimmed and peeled
½ stick (1/4 cup) margarine or butter, melted
1/3 cup honey
¼ t. ground pepper
Boil carrots in a large pot until almost tender. Remove and place on baking sheet lined with foil sprayed with cooking spray (makes for easy cleanup). Heat oven to 400. Mix melted butter, honey, and pepper. Brush over carrots on baking sheet. Roast 15-20 minutes—be careful not to burn (burning will make your kitchen stink if you don’t watch them carefully–I found out the hard way). Enjoy!
