Cabbage and Noodles
Cabbage and noodles has been around for quite a while. I have tried it many times made by many people. This is the best recipe I know. It has great flavor, primarily coming from the bacon ( not everyone puts bacon in their noodles but I think it adds a meaty flavor that is unmistakable!). Before frying the bacon, I like to cut it into 1 inch pieces. It is the perfect size when added instead of just crumbling it. Looks nicer too!
1 lb. pkg. bacon
½ pkg. medium noodles
1 medium head of cabbage
2 large onions, chopped
1 stick margarine
Salt and pepper
Finely chop cabbage and onions. Fry bacon in pan until crispy. Remove bacon to paper towels to soak up extra grease. Boil noodles until soft; then drain. Melt margarine in a seperate large deep fry pan (if you use the same pan as the one you used to fry the bacon, your cabbage and noodles will turn a dark color, which I don’t like); add cabbage and onions; sauté until soft. Add salt and pepper to taste (keep in mind that bacon is very salty). Add the bacon and stir gently. Add cooked noodles and again stir gently. Heat on low for 15-20 minutes so all flavors meld together. Enjoy!
