BBQ Pulled Pork Pasta
If you like BBQ pork and pasta, you will go crazy for this dish. With only four ingredients, you can make this in 15 minutes after a hectic day. Since you customize it to your family’s favorites of pasta and sauce, it can be as sweet or spicy as you want. If you don’t have mozzarella, feel free to use whatever kind of cheese you have in your frig. If you look closely at the picture below, you may notice that I used three different kinds of pasta as I had three partial boxes that I needed to use up and get out of my cupboard. No one will know but you! I like to serve it with fresh peas for a big pop of color. Everyone who has tried this dish asks for the recipe. They laugh when they find out how truly easy it is.
1 container BBQ pulled pork, your choice
1 bottle BBQ sauce, your choice
2 cups pasta, your choice
1 ½ cups mozzarella cheese
Bring large pot of water to a boil; add pasta and cook until done to your liking (some people like it a little chewy. I boil until pretty soft but not mushy or falling apart). In a large deep skillet sauté pork on medium-low heat just to heat through. Add sauce to pork and mix, reserving ½ cup. Drain pasta and add to pork and stir. Top with remaining sauce and cheese. Put cover on skillet; turn heat off and allow to stand for 5 minutes so cheese can melt. Enjoy!
