Saucy Bean Chowder
This is a thick and flavorful soup. If you have a ham bone, boil it along with the beans and onion for 20 minutes for the best pork flavor you have ever had. No fancy ingredients here. The brown sugar and ketchup make a quick tomato base, but adding the vinegar adds a sweet and sour taste that will peak your taste buds. Serve with warm bread for dipping. Yum!
1 jar (48 oz.) Randall Great Northern beans, or 4-16 oz. cans Great
Northern beans
1 small onion, diced 2 cups cooked ham, diced
1-14.5 oz. can sliced carrots 1 cup ketchup
3 T. vinegar ½ cup brown sugar (or more
pepper to taste if you love extra sweetness)
Pour beans into a large Dutch oven or soup kettle. Add ½ jar of water (using bean jar or 2 cans water) and onion; bring to a boil. Add ham and carrots; boil for 15 minutes stirring occasionally. Reduce heat to low; add remaining ingredients. Continue to simmer for 10 minutes. Enjoy!
