Cheeseburger Chowder
My husband and sons order cheeseburger soup whenever they see it on a menu. I figured I could make it at home and it would be creamier and cheaper than the restaurant variety. This soup is super cheesy and thick. You can add more milk (1/2 cup at a time) to thin it down a bit. This is seriously great soup and everyone who has tasted it raves about the flavor!
1 pound ground beef
¾ cup chopped onion
¾ cup shredded carrots
1 teaspoon dried basil or Italian seasoning
1 teaspoon garlic powder
4 tablespoons butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
¼ cup flour
2 cups Velveeta, cubed (16 oz. block)
½ cup milk
¾ teaspoon salt
½ teaspoon pepper
¼ cup sour cream
Brown the ground beef in large 3 quart saucepan. Drain and set aside. In the same saucepan add 1 T. butter and add onion, carrots, basil, garlic powder and saute until tender. Add broth, potatoes and beef and bring to a boil. Reduce heat, cover and cook for 10-12 minutes or until potatoes are tender. In small skillet melt remaining 3 T. butter and add flour. Cook and stir for 3-5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Stir in the cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream. Enjoy!!
