Occupations Overnight Breakfast Casserole

 

Occupations was a subject that originated from Edison School, teaching skills that high school special education students could utilize to be employable and self-sufficient. I used to tell them, “If you like to eat, you need to learn to cook”.  It is more cost effective to cook and eat at home, and healthier for you as well.  This breakfast/brunch recipe is one that we made a number of times as it is easy and you can throw in any veggie/leftover that you have on hand or customize it with whatever your family likes.  No fancy ingredients, but it sure tastes good.  We have eaten it for dinner as well, plain or with maple syrup on top for a sweet rich flavor!

 

 

1 lb. bacon, ham or sausage, cooked and chopped

9 slices bread, buttered and cubed

9 eggs

3 cups milk

8 oz. shredded cheddar cheese

½ cup chopped onion

Chopped veggies (mushrooms, peppers, etc.)

Salt and pepper to taste

 

 

Place buttered cubed bread in bottom of greased 9 x 13 inch pan (if you freeze the bread slightly it is easier to butter and cut into cubes).  Mix together cooked meat and cheese; layer over the bread in pan.  Beat eggs, milk, veggies, and spices; pour over bread mixture in pan, cover, and refrigerate overnight. The next day, bake, uncovered, at 350 for 60-70 minutes.  Enjoy!
