Coconut Toast

 

If you like coconut, you are going to love this toast.  Once the toping gets brown, the sugar converts everything to a lovely nutty and slightly crunchy sweet bread that is great for a breakfast treat or for your next party as an appetizer.  I use English muffin bread to make mine.  Regular bread is sometimes too soft and does not have the body to support the coconut topping.  Find a bread that is heavier and can hold up to the extra weight.

 

1 cup flaked coconut

1 cup sugar

½ cup butter or margarine, melted

1 egg, beaten

1 t. vanilla

12 slices white bread

 

In a bowl combine coconut, sugar, butter, egg, and vanilla; mix well.  Spread over each slice of bread.  Place on ungreased baking sheets.  Bake at 350 for 15-20 minutes or until lightly brown.  Watch that bread does not get too brown at the end of the baking time.  Enjoy!
