Fresh Strawberry Pie

 

 I have made this favorite pie of my husband Jeff many times, too many pies to count.  My dad had a beautiful berry patch.  Some years we picked over 100 quarts from just a few rows.  Dad worked on his hands and knees to make sure there were no weeds, in his garden or his lawn. Our family agrees: nothing is better than fresh strawberry pie!

 

2 small pkg. strawberry jello

3 T. cornstarch

1 cup sugar

1 ½ cups cold water

1 ½ quarts fresh strawberries

1 baked pie shell

 

Cook first four ingredients over medium high heat until transparent.  Cool slightly; pour over strawberries placed in baked shell.  Chill until firm.  Enjoy!
