Corn Bread Chicken
This is the best tasting breaded chicken I have ever eaten! The breading turns into crusty golden goodness with a wonderful ranch flavor. Everyone who has tried this chicken loves it. Easy to clean up too–just toss the breading bag when done. Serve with rice or potato of your choice. Super delicious!
1 pkg. Jiffy corn bread and muffin mix
1 envelope dry ranch salad dressing mix
1 cup milk
1 egg, beaten
6 boneless skinless chicken breasts
3 T. oil
In a large resealable plastic bag combine corn bread mix and salad dressing mix. Pour milk and egg into small bowl; stir with fork. Dip chicken in milk mixture, then place in breading bag and shake to coat. In a large skillet over medium-high heat; brown chicken in oil on both sides. Do not turn breasts too often as this will make the breading come off. Cook uncovered for approx. 8 minutes on each side or until cooked through and juices run clean. Enjoy!
