Cold Pea Salad
This is one of my husband’s favorite summer salads. Colorful and flavorful, it is perfect for a picnic, cookout, or just to serve on a hot summer day with grilled chicken or ribs. With only a few ingredients, you can make this a day or two ahead as this gives the flavors a chance to blend together. And who doesn’t like bacon? Like they say, “Everything tastes better with bacon”. Try it, and I’m sure it will become one of your go-to cold salads too!
1 14-16 oz. bag baby peas, frozen
8 oz. shredded cheddar cheese
½ lb. bacon, fried and chopped
½ cup mayo
½ cup sour cream
½ onion, chopped
1 T. cider vinegar
½ t. each salt and pepper
Place frozen peas in colander; run cold water over the peas and allow to sit and drain until just almost totally defrosted. Place peas in large bowl; add remaining ingredients and stir to combine. If you find that the mixture is too thick and you want it creamier, add a little milk to thin out the mayo/sour cream dressing. Cover, and put in refrigerator for at least 4 hours or overnight. Serve, and enjoy!
